Introduction

This is a lighter version of my mom's potato Soup. In truth, I was just out of a few things. This is a lighter version of my mom's potato Soup. In truth, I was just out of a few things.
Number of Servings: 3

Ingredients

    2 Large potatoes Cubed
    1 Medium White Onion (really any color is ok) rough chopped
    3 stalks of celery rough chopped
    Salt, Pepper, and garlic to taste
    Water

Tips

This is great with some sour cream or Greek yogurt and cheese.


Directions

Chop all solid ingredients and add to large sauce pan. Fill the pan almost to the top with water.
Add Salt Pepper, and garlic
Bring to a boil
Reduce heat & simmer until most of the water has reduced
Add water again and simmer until water is half gone. Taste and add more seasonings if desired

Serving Size: Make 3 large bowls
