Introduction

Ingredients

    -1 large egg
    -120ml rapeseed oil
    -120ml semi-skimmed milk
    -300g plain flour
    -100g oats
    -2tsp baking powder
    -180g caster sugar
    -200g blueberries

Tips

Add 2tbsp of marmalade to the mixture and sprinkle with pumpkin seeds before baking to make perfect breakfast muffins.


Directions

-Combine all wet ingredients (egg, oil, milk) in a jug.
-Combine all dry ingredients (flour, oats, baking powder, sugar, blueberries) in a big bowl.
-Pour wet mixture into the dry mixture mixing slowly until only just combined (this will help the mix to rise when baking).
-Bake for 20-25 minutes until just golden on the top.
