Ingredients

    1 T chopped onion
    1 tsp butter
    2 1/2 oz crab meat
    1 1/5 oz shrimp chopped
    2 1/2 oz colby cheese
    1 8 inch Tumaro's Multi-grain wrap
    1/3 c half and half
    3 T sour cream
    1 1/2 T melted butter
    1 med green onion, chopped
    1/8 tsp garlic salt


Tips

Makes a single serving seafood enchilada to take to work!

Erroneously says makes a single portion of two enchiladas. Makes only one.


Directions

1.Preheat oven to 350 degrees F (175 degrees C).

2.In a large skillet, saute onions in 1 tsp butter until transparent. Stir in crabmeat and shrimp. Shred the cheese and mix half of it into the seafood. Place the mixture into the tortilla. Roll up around the mixture and place in a small baking dish.

3.In a saucepan over medium-low heat, combine half-and-half, sour cream, 1 1/2 T butter, green onion and garlic salt. Stir until the mixture is lukewarm and blended. Pour sauce over the enchiladas, and sprinkle with remaining cheese.
4.Bake in preheated oven for 30 minutes.


Serving Size: Makes a single serving of two enchiladas
