Ingredients

    Salad:
    4 cans black beans (about 9 cups), drained & rinsed
    1 bunch fresh cilantro, raw
    1 medium bell pepper
    1/2 cup chopped red onion

    Dressing:
    1 jalapeno pepper (fresh or pickled/canned) or more to taste
    1/4 cup extra virgin olive oil
    1 cup lime juice
    2 Tbsp ground cumin seed
    1 tsp salt

Tips

You can adjust the heat by varying the amount of jalapeno pepper you use.


Directions

Drain and rinse beans and add to a large bowl. Pulse cilantro in food processor and add to beans. Chop bell pepper and red onion and add to beans.

For the "dressing," add remaining ingredients to food processor and process until completely combined. Pour dressing over bean mixture. Stir to combine. Refrigerate several hours or overnight.

Serving Size: Makes about 18 1/2-cup servings
