Ingredients

    Eggs
    Diced Green Chiles
    Spinach
    Tomatoes
    Red Onion
    Cheese of choice (Mine is made with a little bit of provolone and a little bit of mozzarella)

Tips

I enjoy mine with one slice of whole wheat/sugar free dry toast, and either 1 cup of fruit salad or 1/2 cup potatoes o'brien, and 1 turkey sausage link.


Directions

Steam spinach until soggy and saute all other veggies in a separate pan (I use Olive Oil cooking spray to coat the pan for sauteing and also for the egg pan). Scramble eggs and add to hot pan (non-stick spray) and add all vegetables. Once bubbling, work around the edges with a rubber spatula and give it a flip to cook the other side (takes some practice to get the wrist movement down to flip it). Each side should take just about 1-2 minutes to cook. Once the omlet is fluffy, add the cheese. I usually put a slice in the middle then fold the omlet in half, then add a little bit more to the top and microwave for about 15 seconds just to get the cheese extra gooey. It's yummy, healthy, and filling!
