Ingredients

    Sweet potato, peeled, cubed and baked
    Can of kidney or other beans, drained
    Lime juice, fresh
    Avocado, chopped
    fresh cilantro
    Green or red pepper, sweet, chopped
    Red or green onions, chopped
    Fresh corn, one ear
    Sea salt and pepper to taste
    olive oil

Tips

Quadruple recipe. If desired, grill both the potato as slices and the ear of corn.


Directions

After cooking and cooling the sweet potato, chop all ingredients and add together in a bowl. Toss with mixture of olive oil and lime juice. Salt and pepper as desired. Make a batch to eat for lunch or share at dinner with others.
