A simple no cook salad. Contains no oil in dressing so great for diets.Great for picnics or as a side dish. Feel free to mix and match any vegetable you like. A simple no cook salad. Ingredients

    1/2 c carrot, chopped
    1/2 c celery, chopped
    1/2 c radish, chopped
    1 c black beans, rinsed
    1/2 c bell pepper, chopped
    1 c tomato, chopped
    1-1/2 c zucchini, chopped
    1 c cucumber, chopped
    1 jalapeno, chopped
    1/2 c corn, rinsed
    3 Tbsp lemon juice
    salt & pepper to taste

Tips

Can substitute other beans for black beans. Can add any vegetable or omit ones do not like.


Directions

Chop all ingredients. Deseed cucumber and tomato. Rinse and drain beans and corn. Mix with lemon juice, salt and pepper. Better if refrigerate to let flavors meld.

Serving Size: makes 8 1-cup servings
