Ingredients

    2 boneless skinless chicken breasts
    3 cups low fat chicken broth
    1 package broccoli, cauliflower and carrots
    salt and pepper to taste
    1 package quinoa, brown rice and armaranth spaghetti style pasta (8oz)
    1/2 cup parmasian cheese (optional)

Directions

Cut chicken breasts into chunks simmer in chicken broth. cook pasta according to directions. When chicken is nearly ready add frozen vegetables. Simmer. Rinse pasta with cold water, add to chicken and vegetables, add cheese if you like. Salt and pepper to taste.
