Introduction
Both fresh and sun-dried tomatoes find a home in this spice-laced condiment. A bit of sharpness from onions, garlic and ginger compliments the sweet dried fruit and honey, making it perfect for everything from burgers to pizza, rice, grilled vegetables or tofu! Ingredients

3 medium tomatoes, halved
1 small white onion, chopped
¾ cup chopped sun dried tomatoes
¼ cup raisins
¼ cup chopped dried apple
¼ cup brown sugar
1 tbsp honey (or agave for strict vegans)
⅓ cup water
¼ cup cider vinegar
1 tbsp minced ginger
2 cloves garlic, minced
2 tsp curry powder
½ tsp cinnamon
½ tsp dried red pepper flakes
¼ tsp salt
Directions
Combine all the ingredients in a saucepan over high heat and bring to a boil.
Reduce heat and cook, uncovered, for 20 minutes, until thick. Stir occasionally to prevent sticking.
Adjust seasoning to taste and spoon into hot sterilized jars.
Process for 10 minutes in a waterbath and allow to cool, undisturbed, on a wire rack.
Serving Size: Makes 4 cups, 32 (2-tbsp) servings
