Ingredients

4 lbs Tomatoes (boil to peel & seed), rough chopped
1 1/2 tbls Olive Oil
1/2 c Chicken Broth
1 Onion chopped
1 8oz container Mushrooms, chopped
1 Red Bell Pepper, chopped
3 Garlic Cloves, minced
2 cans Tomato Paste
1 tsp Italian Seasoning
Salt to taste
Pepper to taste
*Optional - for a kick add 3/4 dashes Cayenne Pepper
*Optional - 1-2 tsp sugar/Sugar sub (I like mine with 2 packets of Stevia)
Tips
Good in fridge for up to 4 days, but best to freeze extra in portions for later.
Directions
Wash tomatoes. Cut an X on bottom and up, then boil for 3 minutes. When cool, peel skin, squeeze out seeds and rough chop.
Over med heat cook onions in olive oil and chicken broth until clear. Add mushrooms, garlic and red bell peppers. Cook for 2 minutes (make sure garlic doesn't burn). Add rest of ingredients, add one can of water for each can of tomato paste, stir well and bring to boil. Turn down heat and let simmer for 50 minutes.
*For smoother sauce, put in blender to desired texture.
