Introduction

Number of Servings: 8

Ingredients

    2 lbs of lean ground turkey

    2 tbsp. butter

    1/2 onion diced fine

    3 cloves of garlic minced

    2 large eggs

    1/2 cup of plain dry oatmeal(ground is best but it can go in as is)

    4 tbsp. steak sauce

    1 tsp salt

    1/2 tsp black pepper

    2 cups raw baby spinach

    4 oz. crumbled goat cheese

Tips

You could also bake this in a loaf pan, press 1/4 of the mixture into the bottom of the pan. Place in half of the spinach and half of the goat cheese in on the meat mixture. Cover with another 1/4 of the meat mixture.

Enough to fill 2 loaf pans.


Directions

Heat oven to 350 degrees.

Line a baking sheet with foil and lightly grease.

Saute onions and garlic in butter over medium to low heat.

In a mixing bowl combine ground turkey, eggs, oatmeal, steak sauce, salt, pepper and mix well.

Add the cooked onions and garlic to the ground turkey mixture and mix again.

Divide the mixture in half to make two rolls. Lay a piece of plastic wrap or wax paper down. Spread out one half of the mixture into a rectangle shape about 1/2 inch thick. Place half of the spinach and half of the goat cheese down the center. Fold one end over the other and place on the baking sheet.

Do the same with the other half of the mixture.





Serving Size: Serves 8 or more.
