Ingredients

    Whole Wheat Pasta, 8 oz
    Spinach, fresh, 6 oz
    Radishes, 1 cup slices
    Asparagus, fresh, 20 medium spears, trimmed and cut into 1 in. pieces
    Red Onion, 1 cup, sliced
    .5 cup cherry tomatoes, halved or quartered
    Bacon, 6 medium slices, cooked

Directions

Cook pasta according to package instructions, less fat and salt. Soak onion in some water to calm the bite if desired. Meanwhile, saute bacon until crisp, remove to papertowel to drain. Drain fat from pan, add radishes and asparagus, saute for about 5 minutes (adding small amount of olive oil if neccessary). Until red skin begins to turn a fushia color. Add cherry tomatoes and saute about 2 minutes. Place fresh spinach in colander. Drain pasta over spinach. Place radish mixture in large bowl. Add pasta and spinach to bowl. Toss. Top with crumbled bacon slices and sliced onions (removed from the water). This makes 4 servings. Also great with leftover chicken or as a side dish!
