Ingredients

2 16oz cans black beans, drained
1 15oz jar Patak's Tikka Masala Curry Simmer Sauce
1 medium onion, chopped
2 small potatoes, cooked and chopped
1 cup chopped zucchini
1 cup frozen spinach
1 large or 2 small plum tomatoes, chopped
1 tbsp canola oil
Tips
This recipe is great for using whatever veggies you have in your garden or fridge. For pre-cooking the potatoes or harder vegetables such as broccoli I like to microwave them. For potatoes: poke a hole in each side, microwave for 3 minutes, flip the potatoes and microwave for another 3 minutes. For other vegetables you can chop them and put in a bowl with a little water and microwave until softened.
Directions
Saute the onions and zucchini in the oil until soft, about 5 minutes. Add the remainder of ingredients, stir and bring to a gentle boil. Turn down heat and simmer together for about 10 to 15 minutes.
