Introduction

Easy, Just chop and toss together Easy, Just chop and toss together
Number of Servings: 1

Ingredients

    1 PT Grape Tomatos, halved (I use a combo of Yellow and Red)
    2 Med size Cucumbers, Rough Chopped
    1/2 cup Diced Onion
    2 oz Kalamata Olives, Halved
    2 oz Feta Cheese, Crumbled
    1/2 cup Quinoa ( Cook per Pkg instructions, be sure to rinse dry quinoa first, it can be bitter)

    Dressing
    1/4 cup EVOO
    1/4 cup Red Wine Vinegar
    2 tsp Oregano
    Salt and Pepper To taste

Directions

Cook Quinoa per package instructions, cool in fridge
Chop, siice or dice addl ingredients
Whisk together dressing

Toss together, Better if it marinates a bit before serving. Make in AM serve in PM or overnight


Serving Size: 6 however Will depend if using as a side or a Meal
