Introduction

Number of Servings: 6

Ingredients

    1 10 oz pork loin, boneless - trimmed of all fat
    1 large onion, chopped
    1 tsp ground cinnamon
    1 tsp paprika
    2 tsp garlic powder
    2 tsp ground coriander
    2 tsp ground cumin
    2 tbsp cayenne pepper
    1 16 oz. can low sodium pinto beans
    1 16 oz. can low sodium black beans
    1 16 oz. can low sodium kidney beans
    1 6 oz. can tomato paste
    1 cup white rice (dry)
    3 cups water

Directions

Chop the pork into bite size pieces, and mix with all other ingredients - except the rice - in a slow cooker.

Add the rice two hours before the stew is done, if cooking on low - 1-1.5 hours if cooking on high heat.

Cook for five to 6 hours on low (or three hours on high).



Density can be adjusted - as well as serving size and quantity, by adding more or less liquid.
