Zucchini Cookie Recipe
What You Need:
3/4 c. butter
1 1/4 c. sugar
1 egg
1 t. vanilla
1 1/2 c. shredded zucchini
2 1/2 c. flour (you could also sub this for gluten free all purpose flour)
2 t. baking powder
1 t. cinnamon (optional)
1/2 t. salt
1/3 c. mini chocolate chips
Tips
The recipe called for 1 1/4 cups sugar but I was out so I used Agave Nectar instead reducing amount per instructions on bottle. The cookies came out very soft and cake like. They are delicious
Directions
Mix together the butter, sugar, egg, and vanilla.
Add in the zucchini.
Add in the dry ingredients, stir in the chocolate chips last.
Drop by teaspoonful onto a greased cookie sheet. Bake at 350F degrees for 15 minutes or until just slightly brown.
Serving Size: made 36 generous sized cookies
