Ingredients

    1 cup cooked cauliflower (I used some that I had leftover)
    2 large eggs
    1/2 cup shredded mozzarella
    a sprinkle of chopped green onion to taste

Directions

heat a skillet with about 1/4 inch of canola oil. Put all ingredients into the food processor and process until the mixture resembles shredded potatoes. Drop mixture in mounds into hot oil using a large serving spoon (about 1/4 cup mixture per mound). Serve warm with sour cream.

Serving Size: Makes 9 patties
