Ingredients

    4 Medium Potato, Yellow-flesh
    1/2 cup Onion Chopped
    1 Cup of sliced Mushrooms
    5 tbsp Dill weed
    1.5 tbsp Black Pepper
    2 tbsp Salt
    1 tbsp Paprika
    3 tbsp Parsley
    4 Cloves Garlic
    Extra Virgin Olive Oil

Tips

can also add other veggies such as carrots

can add different herbs & spices to your taste

if you want more of a crisp, you can broil for 3-5 additional minutes


Directions

pre-heat oven to 425
wash & slice potatoes and place in a large bowl with onions and mushrooms
add in garlic & spices to taste
drizzle with olive oil & mix well, so that the potatoes are coated
place in a large baking dish & cook for 45 minutes, flipping occasionally so that potatoes are roasted all over
