Introduction

An easy option when you want peanut/nut butter cups, but don't want dairy! I use Guittard Semi-Sweet Chocolate Chips, which do not have dairy, but are made in a factory that processes milk. My lactose intolerance is not so bad that a trace of milk would throw off my day.

This could easily be done with peanut butter or any other nut butter, and any other nuts. This is just what I had at home. Adding nuts to the nut butter dries it out a bit and gives it a texture similar to a "real" peanut butter cup.

Ingredients

    1 cup Chocolate Chips
    1/2 tsp. Sugar In The Raw (optional)
    1/2 cup Almond Butter
    1/2 cup Pecans


Directions

Melt half of the chocolate chips with your preferred method. Add sugar if desired; please note the sugar may not melt completely, and may leave a crunchy texture. Spoon melted chocolate chips into six muffin cups (which is easier if the cups are in a muffin tin).

Blend the almond butter and the pecans. You can blend to a smooth consistency, or leave the pecans a bit chunky. Spoon mixture into muffin cups over the melted chocolate and smooth over chocolate as evenly as possible.

Melt the remaining chocolate chips, and spoon over the nut butter mixture. Place in freezer for at least 30 minutes, or until hardened. Keep remaining cups refigerated.
