Ingredients

    Heat 2 TB olive oil over med-low heat in a saute pan. Add 1 small chopped onion, 1 chopped jalapeno, and 1 chopped banana pepper (or poblano, anaheim, etc.). Saute until softened.

    Drain one large can of black beans (I like Goya) and add beans to pan. Reduce heat to low, and let simmer for a few minutes. Add garlic salt.

    Nuke corn tortillas in a paper towel for 15 - 20 seconds, depending on microwave. To prepare tacos, first put a little sour cream on each tortilla, then add beans, salsa verde, and a sprinkle of cheese.

    One serving = three tacos
