Introduction

Ingredients

    freah figs, chopped, 1500 grams (about 8 cups)
    lemon juice, 1.5 cups (adjust to taste)
    sugar .5 cup
    water (optional - adjust to desired consistency)

Tips

The lemon juice lightens up the flavor and keeps the color bright.


Directions

Combine all in pot.
Bring to boil, stirring occasionally.
For thinner sauce or jam add more liquid, for thicker use less liquid or cook longer.
Once figs are cooked, use a potato masher or immersion blender to break up large pieces. (I like it somewhat chunky so I use a masher.)
Let cool, then refrigerate, can, or freeze what you don't use right away.

Serving Size: Makes 64 2-tablespoon servings.
