Ingredients

    1 cup applesauce
    1/4 cup margarine,softened
    3/4 cup white sugar
    6 Tablespoons of Egg White Substitute (2 servings)
    1 teaspoon vanilla extract
    1 3/4 cups all-purpose flour
    1/2 teaspoon salt
    1 1/2 teaspoons baking powder
    12 Tablespoons flaked coconut (3/4 cup)
    16 Tablespoons chocolate chips (1 cup)
    3/4 cup raisins
    1 cup grated almonds
    2 cups grated zucchini (place on paper towels to sop up excess moisture)

Directions

1. Preheat oven to 350 degrees F. Grease a 9x13 inch baking pan.

2. In a large bowl, cream together the margarine, white sugar and applesauce. Mix in egg substitutes and vanilla. Sift together the flour, salt and baking powder -- mix into the creamed mixture. Stir in the coconut, raisins, chocolate chips, almonds and zucchini. Spread batter into the prepared pan.

3. Bake in preheated oven for 40 minutes.
