Mom used to make this quite a bit when I was younger. Can be modified to make even healthier if you wish using other lean ground meats or whole grain/wheat pasta. Ingredients

    Crushed Tomatoes, 1 Container or 400 grams
    Lean Ground Beef, 8% Fat
    Elbow Macaroni, 200 grams dry
    1 Medium Onion, Chopped
    1 Red (or Green) Pepper, Chopped
    Garlic, 4 cloves, Chopped
    Tomato Paste, 1 small can (6 oz)
    2 Cups Water
    Extra Virgin Olive Oil, 1 tbsp
    Salt and Pepper (to your taste)
    1/2 Tbsp Paprika

Tips

This makes a huge amount of food, and depending on your dietary needs, it could make far more than 4 servings. This recipe can be modified in many ways to have smaller portions, make it healthier, etc.


Directions

Brown the chopped onion, garlic, and pepper in the tablespoon of olive oil. Once soft and to your liking, add the ground beef and cook together roughly 10-15 minutes or until the meat is thoroughly cooked. Afterward, add your tomato paste, water, crushed tomatoes, and salt/pepper. Allow the food to cook together until the macaroni is tender (or to your preference) which is roughly another 15-20 minutes. Make sure the pan is covered at this time and on medium heat. Upon the finish, stir in the 1/2 tbsp paprika (or more, if you prefer more of the flavor.) Serve and enjoy!
