Ingredients

    2 bunches kale (roughly chopped)
    3 cups cauliflower (roughly chopped)
    1 medium onion (roughly chopped)
    2 cups chicken broth (low sodium)
    3 clove garlic
    1.5 tsp salt
    Black pepper to taste
    2 TBSP extra virgin olive oil
    4 oz goat cheese
    2 cups 2% milk

Tips

The cauliflower was an option, because I hade some that needed to be used up, but soup is great with just kale if you don't have any cauliflower on hand.


Directions

Sauté veggies in olive oil over medium heat for 5 min
Add chicken broth and seasonings
Bring to a boil then simmer until soft (about 15-20 min)
Remove from heat, allow to cool slightly
Purée in blender to desired consistency
Add goat cheese and milk
Return to heat but do not boil, heat to desired temperature.

Serving Size: Makes about 8 1- cup servings
