Number of Servings: 4

Ingredients

    one can coconut milk
    coconut oil or olive oil 1 tbsp
    3 cloves minced garlic
    half red onion sliced
    1 cup sliced shiitake mushrooms
    half a jalapeno pepper
    1.5 cup vegetable broth
    fresh ginger 5-6 slices
    1 Lime squeezed
    1 16 ounce package of Tofu
    Cilantro as much as you want

Directions

Sautee onion, garlic, mushrooms in oil for a few minutes. Reduce heat to low and add the vegetable broth, coconut, and remaining ingredients except for cilantro.
Simmer over low heat for 15 minutes. Stir in cilantro right before serving
