Ingredients

    1-1/2 cup torn Romaine Lettuce
    1/4 green pepper, sliced
    1 thin slice onion, chopped
    3 grape tomatoes, cut in half
    1/2 tablespoon olive oil
    (salt and pepper to taste)
    some fresh cilantro leaves, optional
    1 tablespoon sliced black olives
    1/4 cup salsa

Directions

Make the raw walnut taco meat recipe ahead of time!
Mix up the black beans and Green chilis recipe.

When you are ready to assemble the salad, put the lettuce, green pepper, onion, and grape tomatoes in a bowl. Mix with the olive oil. Add cilantro,salt and pepper if desired.

Top with 1 serving raw walnut taco "meat", 1/2 to 1 serving black beans and chilis, salsa. Also you may add avocado, corn chips, and shredded cheese substitute if desired.
