Ingredients

Turkey Polska Keilbasa, 14 oz
Cheddar Cheese Block, 3 oz
Onions, raw, 1/2 onion
Sweet Mini Peppers, 3 small
Potatos, 3 medium
Parsley, dried, 1 Tbsp
Directions
Peel potatoes. Chop into 1 inch cubes. Place in a pot of water on high heat. Bring to a boil.
Boil potatoes for 5-10 minutes, or until a fork slides through without much effort. You do not want them too soft, or else they'll fall apart while cooking.
Thinly slice keilbasa. Dice peppers and onions. Saute vegetables in canola oil over medium-high heat until onions are transparent. Reduce heat to medium-low. Add keilbasa.
Once potatoes are tender, drain, and add them to the pot with the keilbasa, peppers, and onions. Add a tablespoon of parsley. Increase heat to medium-high, stirring frequently. Do not let sit too long or it will burn. Continue cooking for about 15-20 minutes, or until warmed thoroughly.
