Ingredients

    14 oz can salmon, drained ( pink or red is fine)
    1 egg, scrambled
    20 saltines, crushed into fine crumbs
    2 tsp lemon juice
    1/3 cup minced onions
    1/4 tsp Cajun seasoning
    1 tbsp parsley
    1 tsp. garlic
    1 tsp Old Bay seasoning

Tips

These taste really good on their own, but also taste good with tartar sauce or remoulade sauce.


Directions

Drain salmon and put into a medium bowl. Be sure to pick out any bones as you break it up with a fork. Add onions, egg, lemon juice, and cracker crumbs. Stir together. Add seasonings to taste and be sure to mix well. Shape into small patties ; this should make about 6-7 patties.
In a medium skillet over medium low heat, add canola and allow oil to warm for 1-2 minutes. Add patties and cook until golden brown on each side; about 5 minutes on each side.

Serving Size: Makes about 7 patties, 2 oz each
