Ingredients

    1 lb extra lean ground beef
    2 onions, diced
    1 green bell pepper, diced
    1 jalapeno, diced
    1 (14 oz) can of Rotel tomatoes
    2 (8 oz) cans reduced sodium tomato sauce
    2 tbsp cumin
    2 tbsp chili powder
    1 tsp salt
    1/2 tsp cayenne pepper
    1/2 tsp paprika
    1 (14 oz) can of kidney beans, drained and rinsed
    1 (14 oz) can of black beans, drained and rinsed
    1 cup water

Directions

brown the meat with the onions, bell pepper, and jalapeno until the meat is fully cooked. Drain any excess fat then add to crock pot or dutch oven. Add the can of Rotel tomatoes, the rinsed black and kidney beans, all spices, and the tomato sauce. Stir together, then add water until the desired consistency is reached. Cook in a crock pot for at least an hour, or up to however long you'd like for flavors to meld and all ingredients to heat through (I have let it go for entire work days before, with wonderful results).

Serving Size: makes 4 large portions (approximately 1.5 cups each)
