Ingredients

    2 boneless, skinless chicken breasts cut into smaller pieces
    2 cups broccoli florets
    1 cup sliced carrots
    1/2 cup no-salt cashews
    4 tablespoons rice wine vinegar
    3 tablespoons ketchup
    1 tablespoon brown sugar
    1 garlic clove minced
    1 tablespoon ginger paste
    1/4 teaspoon red pepper flakes
    1/2 cup chicken broth

Tips

Serve alone or over rice/noodles.


Directions

Layer chicken, vegetables and cashews in bottom of crockpot. Combine remaining ingredients except broth and pour over ingredients in crockpot. Add broth as needed during cooking process. Cook on high, 2-4 hours or cook on low for 4-8 hours.
