Number of Servings: 6

Ingredients

    30 grams almond slices
    5 cups leafy greens
    1/2 head iceberg lettuce
    2 canteloupe melons, seeded and cubed
    150 grams crumbled fat free feta cheese

    Dressing:
    1 Tbl walnut oil
    2 Tbl apple cider vinegar
    1 Tbl water
    1/8 tsp pepper
    dash of stevia
    1/8 tsp parsley flakes

    Balsamic cream

Tips

This is a THM E dinner. You will have some extra carbs available for a dessert or some wasa crackers if you like.


Directions

Toast almond slivers in a dry skillet.
In a large bowl, comgine torn lettuce, melon cubes, and feta crumbles. Mix salad dressing in shaker bottle and pour over lettuce. Toss to coat.
Plate salad in 6 shallow bowls and drizzle with balsamic cream.
