Introduction

I made this soup while on the Wild Rose Detox cleanse. I couldn't get enough of it and I'm so glad I made a big batch! Ingredients

    1 medium onion, diced
    3 cloves garlic, minced
    1 medium-large head of Cauliflower, cut into florets
    3 medium yellow potatoes, cut into 1" cubes
    6-8 cups vegetable broth (I used yeast free bouillon while on WR Detox diet)
    1 heaping tablespoon curry powder (I used Jamaican curry; very spicy)
    Salt and pepper to taste

Directions

Steam cauliflower and potato (separately) until nearly cooked; set aside. Alternatively, vegetables can be added raw directly to pot; however, steaming made sure that they were not overcooked so that there was still texture in the soup.

In large soup pot, sauté onions and garlic in avocado oil until transparent. Add salt and pepper.

Add steamed or raw vegetables, broth, and curry powder to pot.

Cover and simmer until vegetables are fully cooked (30-40 minutes if steamed; longer if raw).

When vegetables are very soft, use hand blender to puree soup until desired consistency.

Serve hot.

Optional: Garnish with plain greek yogurt (if not on Wild Rose Cleanse)
