Ingredients

    2 Boneless, skinless chicken breasts, cooked and cubed
    1 package cauliflower
    8 oz cheddar cheese, shredded
    8 oz monterey jack cheese, shredded
    1 bundle green onions (scallions), sliced
    4 oz. turkey bacon pieces
    1/8 tsp. garlic powder
    salt & pepper to taste

Directions

1. Preheat oven to 350 degrees
2. Steam cauliflower until tender
3. Combine cheeses in a large bowl. Remove 1/4 of cheese and set aside. Stir chicken, green onions, bacon, and garlic powder in to remaining cheese.
4. Stir cauliflower into cheese mixture and season with salt and pepper. Pour into a 9x12 glass baking dish. Top with additional cheese (the 1/4 that was set aside).
5. Cover with foil and bake for 25 minutes
6. Remove foil and bake for an additional 5 minutes
