Introduction

Ingredients

    2 tbsp olive oil
    1 Onion diced
    4 Cloves Garlic diced
    6 Carrots sliced
    3 Celery stalks sliced
    1/2 pepper diced (I used yellow)
    1 large tomato chopped
    4 Morningstar Sausage Patties defrosted (152g)
    8 kale leaves chopped (cut out the stem)
    32 oz vegetable stock
    tsp dried basil
    4 bay leaves
    1/2 tsp dried oregano
    1/2 tsp sea salt
    pinch black pepper
    pinch cayenne pepper
    grated parmesan cheese

Tips

You can also toss in a crock pot and leave for the day which makes the flavors even better. Add any frozen vegetables you would like to this base. I have added broccoli, peas, green beans, corn. You can add water and a boullion cube or two in proportion as wanted.


Directions

In deep frying pan or dutch oven heat 1 tbsp oil on medium high heat. Saute onions and garlic 4 minutes or until they start to get clear. Add carrots, celery, pepper and saute 5 more minutes. If starting to stick add more olive oil to pan. Add chopped veggie sausage and kale and tomato. Heat for another 10 minutes. While heating add salt, pepper. cayenne pepper basil and oregano or any other of your favorite spices. Add vegetable stock and bay leaves heat on low for 20 minutes.
Top with fresh grated parmesan to serve.
