Ingredients

8 Boneless, skinless chicken thighs
1 med. onion
8 carrots, cut into rounds
2-3 celery stalks
2 cream of chicken soup
1 head cauliflower, chopped small (just larger than cauli-rice)
salt and pepper to taste
2 tbsp. lemon juice
4 Cups water
Tips
Chicken thighs (boneless and skinless) work best for long cooking in the crockpot as they do not get mealy or dry cooking this way. Also, don't skimp on the cream of chicken soup as this is the only real extra in this low-cal soup. 2 cup serving is roughly 266 calories.
Directions
Place chicken thighs, chopped onion, carrots, and celery in crockpot with 4 cups water. Cook for 6-8 hours on low. Add cream of chicken soup, salt and pepper, lemon juice and cauliflower about an hour to 1.5 hours before serving. Gently break up chicken (will be easy to fall apart) before serving. Bon Appetit!
