Ingredients

    4 tbsp butter
    1 medium onion
    6 cloves garlic
    1 stalk celery
    1 lb raw shrimp (with shells)
    21/2 C water
    1/4 C flour
    Campbells family size tomato soup
    11/2 C low fat half and half
    cayenne pepper

Directions

sauté celery and half the garlic and onion (minced), and shrimp shells in 2 tbsp butter for 3 mins. add 2.5 C water bring to a boil, reduce to simmer. Add salt, pepper, 1 chicken bouillon cube, and thyme, simmer 20 minutes. Set aside.

Saute in large pot, 2 tbsp butter and the remaining garlic and onion for 3 mins, whisk in 1/4 c flour. Slowly whisk in tomato soup. Strain (using mesh strainer) in the broth made prior. bring to simmer for 5 minutes.

Add 1.5 C half and half. Add cayenne pepper to taste. allow to come to simmer.

Add minced shrimp and cook for about 4 minutes.
