Introduction

Ingredients

    8 medium potatoes
    6 large eggs
    1/4 cup extra virgin olive oil
    spices/seasonings to taste

Directions

1. Peel and dice potatoes into small cubes.
2. Heat olive oil in large skillet; add potatoes.
3. Cook potatoes until soft and slightly browned.
4. Add spices or seasonings if you like while the potatoes are cooking. (We use onion/garlic powder.)
5. Scramble eggs in large bowl and pour over potatoes.
6. Gently stir mixture until eggs are cooked.

Makes 8 1-cup servings.
