Ingredients

    1 medium onion
    2Tblsp Light Extra Virgin Olive Oil
    6 cloves garlic
    3 carrots
    3 celery stalks
    1 red bell pepper
    2.5 cups Sweet potato
    2 cups Kale w/ stems
    S&P to taste
    4 cups good vegetable broth
    Either Italian herb mix or Dill weed or Both(!) to taste

Tips

You could sub in Spinach instead of Kale if you choose.


Directions

On medium low, add onion to oil and a dash of salt. Sweat out the onion until starting to get soft. About 3 mins. Add half garlic, at same temp for same timeframe, cook likewise. Then add in both chopped carrots, and bell pepper with a bit of salt. Stir, leave for about 4 mins. Change temp to medium and add chopped celery and sweet potato, stir in a bit more salt and cook for 10 mins. Stirring occasionally. Add Kale, spices and broth and cook on medium low for another 10 mins & you are set!!

Serving Size: Makes 4 servings of approx. 2 cups each!
