Introduction

Not my recipe. For pumpkin pie use Libbys 15 oz can recipe and sub heavy cream for the evap. milk and Splenda for the sugar--add eggs last so you can taste the filling for sweetness and spices--you may want less splenda or more spices. 1/8 can is about 3 net carbs. Ingredients

    •2 cups almond flour
    •4 tablespoons melted butter
    •2 large eggs
    •1 teaspoon salt

Tips

1.For miniature tarts, use a 2" biscuit cutter to cut circles into the dough. Put a miniature cupcake paper into each well of a miniature cupcake pan.
2.Take each dough circle and carefully press it into a paper cup. This is easier if you use a Mini Tart Shaper.
3.If the dough breaks, just add a bits of dough into the holes and press again with the tart shaper.
4.Bake at 350 degrees F for about 5-6 minutes or until edges are golden.


Directions

1.Place the almond flour in a medium mixing bowl and add the butter. Mix well.
2.Add the eggs and salt and mix throughly. The dough should come together, and pull away from the sides of the bowl and start to make a ball as you mix it. If it still seems sticky, add a little more almond flour and keep mixing until you get to a dough consistency that can be rolled out.
3.Place the dough ball between two sheets of parchment paper.
4.Using a heavy rolling pin, roll the dough out into a 10" x 16" rectangle with about a 1/4 inch thickness.
5.Bake at 350 degrees F for about 5-6 minutes or until edges are golden.

Serving Size: makes 8 servings (14" round with 2" deep dish sides)
