    leeks or onions
    green pepper
    red peppers
    zucchini
    white cheddar
    parmesean
    feta
    basil
    salt
    pepper

Tips

you could add a bit of olive oil and caramelize the veggies ahead of time, but that adds calories and time to the process.


Directions

cook quinoa as instructions, i use .5 cup dry quinoa and 1 cup of water. I also cooked it in a rice cooker.
