Ingredients

    1 lb - Ground beef - 80/20
    1/2 cup parsley
    2 egg whites beaten (save yolks for egg/lemon sauce)
    1 medium onion - grated
    1/3 cup long grain white rice
    1/8 cup of water
    2 tbs lemon juice
    2 tsp Greek seasoning
    Salt & Pepper to taste
    4 cups chicken broth




Directions

Mix all ingredients except egg yolks and chicken broth and form into meat balls (1 full tbs). Bring broth to boil and add meatballs, turn down heat to gentle simmer and cook meat balls until rice is tender-about 30 minutes. Remove meatballs from broth. Whisk egg yolks in a separate bowl and add 1/2 cup of broth by drizzling into the eggs, while continuing to whisk eggs. Turn off heat to broth, and drizzle egg/broth mixture back into the pot with broth, while whisking. Add lemon juice to taste and serve meatballs with egg/lemon sauce.
