Number of Servings: 12

Ingredients

    2 tbsp. olive oil
    1/2 head of cabbage
    1 med yellow or white onion
    1 cup chopped - carrots
    1 cup chopped - celery
    2-3 cloves garlic
    1 14oz can of Hunts Diced Tomatoes w/ Basil, Garlic and Oregano
    5 cups of Swanson Natural Goodness Chicken Broth
    1 Medium Green Bell Pepper chopped
    1 tsp Oregano (optional)
    1 tsp cayenne pepper (optional)
    3-4 shakes of black pepper
    3-4 shakes of salt

Tips

Keeps good for about 3 days. Refrigerate after cooking.


Directions

heat olive oil in soup pot. Slowly add onion, carrots, bell pepper and celery. Sautee until tender. Add garlic, cook until fragrant. Add Chicken broth, bring to boil. Add Cabbage and tomatoes(don't drain can). add Oregano(opt), Cayenne(opt) and salt/pepper. bring to boil then lower to a simmer for about 15-20 mins or until cabbage is tender. Taste broth and adjust taste as needed.
