Introduction
These are the BEST muffins for breakfast, snacks, etc! Gluten free, and so moist! You can add any of your favorite fruits or nuts to change them to your liking. I also did a glaze using 3/4 c. Splenda, 1/4 tsp. Vanilla, 2 TBLS. of NF/Dairy Free Coconut Milk...mix it all up and glazed out of the oven. These are the BEST muffins for breakfast, snacks, etc! Gluten free, and so moist! Ingredients

1 c. Unsweetened Applesause
3 oz. Plain, non-fat Greek Yogurt
1 c. of Unsweetened Vanilla Coconut Milk (you can use Unsweetened Almond Vanilla also...)
2 Tbls. Baking Powder
3 Cups of Plain Oatmeal
2 Tsp. of Vanilla Extract
3 Tsp. of Cinnamon
1 Tsp. of Salt
1 Small Apple, Diced
Optional Glaze:
3/4 c. Splenda
1/4 tsp. Vanilla Extract
2 TBLS. NF/Unsweetened Vanilla Coconut Milk or Almond Milk
...Mix and put on muffins after baking...
Directions
Pre-heat oven to 350. Add all ingredients in large bowl, mix. Spray muffin tins with Pam. Bake 20 Minutes. Let stand for 10 minutes...
**OPTIONAL - Glaze (Yummy...and adds 20 extra calories to entire recipe) See mixture in my intro...or make your own if you want a more "cinnamon roll" flavor...
