Number of Servings: 8

Ingredients

    Beans, navy, 1 cup dry or 3 cups cooked or 2 cans

    Onions, raw, 1 medium (2-1/2" dia) roughly chopped
    Celery, raw, 2 stalk, medium (7-1/2" - 8" long) sliced
    Pork loin, 2 lbs

    16 oz bag Collards, frozen, chopped,
    Bell Pepper, Green, Red or a combination, roughly chopped

Tips

This would be better with a some bacon but I left it out to reduce fat.


Directions

If using dry beans, cover them with water bring to a boil for 2 minutes turn off heat and let stand 1 hour. Pour off water, add new water to cover, bring to a boil, turn down to simmer and cook for 45- 75 minutes (until just tender)

Meanwile put pork onins & celery in slow cooker. Cook on abt low 2 hours, or until pork can be pulled apart.

Put pulled pork back in slow cooker with onions & celery.
Add cooked beans, collards and peppers.
Add your choice of seasonings.

Turn slow cooker up to high and cook anther hour or so.

Serving Size: makes 8 1.5-cup servngs
