Ingredients

    3 cups cooked brown rice
    1 lb lean ground beef
    1 chopped medium green bell pepper
    1 chopped medium red bell pepper
    1 chopped medium onion
    3 cloves chopped garlic
    2 14.5 oz cans petite diced tomatoes
    1 15 oz can tomato sauce
    2 cups low sodium, fat-free chicken broth
    1 tsp chili powder
    1 tsp salt
    1/2 tsp pepper
    1/2 cumin

Directions

1. Cook rice according to package directions.
2. In a large soup pot, brown ground beef and drain any remaining fat.
3. Reduce heat. Add peppers, onions and garlic. Cook until the veggies are slightly tender. (About 5 minutes)
4. Add in canned tomatoes, tomato sauce, chicken broth, chili powder, salt, pepper, chili powder and cumin. Bring to a boil.
5. Cover and simmer for 5 minutes.
6. Add in the cooked rice and simmer on low for 25 minutes.
