Introduction

Number of Servings: 4

Ingredients

    8 1/8inch slices lengthwise Zucchini
    2 tbsp Extra Virgin Olive Oil
    2 tbsp Tomato chopped
    2 tbsp Parsley chopped
    2 oz Cheese - Neufchatel
    Salt and pepper to taste

Tips

If you use an oil sprayer like I do you use less oil. Total for me 2 sprays @ approx 1 teaspoon each for whole recipe. You may need to measure your sprayer I did 3 times and it was consistent Just under 1t.


Directions

Preheat grill or broiler. Brush zucchini with Olive oil and grill 2-3 min on each side until lightly brown. Let cool slightly. Spread each with 1/8 of the cheese. Top with 1 teaspoon tomato and 1 teaspoon parsley season with salt and pepper to taste. Roll up like jelly-roll and secure with a toothpick. Serve Immediately.

Serving Size: 4 servings of 2 rolls each
