Ingredients

1 cucumber, about 8 oz (250 g)
1 teaspoon salt
2 teaspoons sugar
2 teaspoons Chinese rice vinegar
Directions
1 Rinse the cucumber thoroughly with cold running water.
2 Quarter the cucumber lengthwise. Remove and discard the seeds. Slice the cucumber diagonally into pieces, each about 1/3-inch (1 cm) thick.
3 Transfer the sliced cucumber into a bowl, add the salt and mix well. Set aside for 30 minutes.
4 Drain the water and add the sugar and Chinese rice vinegar to the cucumber. Stir to blend well. Chill in the refrigerator for at least an hour before serving.
