Introduction

simple salmon salad made with greek yogurt simple salmon salad made with greek yogurt
Number of Servings: 9

Ingredients

    yogurt (Greek plain or vanilla)
    lemon juice (fresh squeezed)
    mustard spicy brown
    black pepper
    garlic powder
    salt to taste
    light miracle whip
    salmon
    celery
    red onion
    honey crisp apple

Tips

chopping the vegies fine is best

optional: add yellow curry powder or add your favorite pasta
if you don't like sweet - omit the apples (or only use 1 small) and miracle whip- use hellmans or dukes instead
servings: I changed to 9 because the vegies add more substance but if you go by the salmon it only serves 7 in a can which is about 63 grams.

Directions

salad dressing:

take yogurt and stir in a bowl by itself - you must do this before adding lemon juice or it will curdle
add lemon juice (fresh squeezed)
add 2 TBS of mustard
add black pepper
add garlic powder
add salt to taste
add the light miracle whip if it is too dry and needs some (otherwise you could skip to save calories)

in another bowl add salmon
chopped celery, onion, and apple

then add salad dressing and mix....I think it tastes great with Ritz crackers or over a bed of iceberg lettuce.
