Ingredients

    Saute spinach with 1 tsp butter, feta and laughing cow cheese.

    Slice chicken breast and stuff with spinach mixture.

    Combine potatoes, green beans (cut into 2 inch pieces), pesto and EVOO in a medium mixing bowl.

    Place stuffed chicken and potato mixture into baking dish and bake at 350 degrees F for 30 minutes or until chicken is cooked through.
