Ingredients

4 ounces brown rice pasta
3 Tbs. breadcrumbs
2 Tbs. unsalted butter
1/2 cup finely diced onions
1 1/2 c. finely diced mushrooms
2 Tbs. flour
1 tsp. fresh thyme or 1/3 tsp dried
1/2 tsp. white or black pepper
1 1/2 cup milk
12 ou. canned tuna
1/4 c. Swiss cheese
2c. frozen peas and carrots
Directions
1. Preheat oven to 350 degrees. Prepare and 8 x 10 baking dish with non-stick cooking spray. Cook the noodles according to directions.
2.Place the butter in medium saucepan over moderate heat. Once butter is melted, add onions & mushrooms. Cook for about 2 mins. Sprinkle flour over vegetables and stir to combine; cook for 1 minute. Add thyme, then pepper. Add milk. Stir until mixture comes to a boil, then reduce and simmer 2-3 minutes.
3. Add tuna, cheese, peas and carrots, and noodles to the pan and stir and combine. Transfer to prepared baking dish and top with breadcrumbs. Bake 15 to 20 minutes until bubbly. Serve warm.
